Mediterranean-style baked avocado

Ingredients for 4 persons

1 cup (180 g) Pomodori Secchi sun-dried tomatoes
½ cup roasted peppers (approx. 50 g)
½ cup Kalamata olives (pitted) (approx. 50 g)

1/2 cup pitted green olives from Greece (approx. 50g)
1 glass (200 g) Schafküsschen sheep's milk cheese bites with fine herbs
4 avocados
Chopped flat-leaf parsley to garnish



Cut sun-dried tomatoes, grilled peppers, pitted Kalamata olives and pitted green olives into small pieces. Add the Schafküsschen sheep´s milk cheese bites, mix together and season with salt and pepper. 


Cut avocados in half lengthways and carefully remove the pit from the centre. 


Fill the hollow left by the pit with the Mediterranean mixture and bake in the oven at 170º C (fan) for approx. 10 minutes.
