Mini cream cheese crescents with cheese and ham
Ingredients for approx. 28 crescents
150 g flour
100 g butter
150 g “Feine Ziege” goat’s milk cheese spread (1 cup)
½ tsp salt
1 cup of spicy sheep’s milk cheese bites
4 slices of boiled ham (round if possible)
1 egg yolk
Preparation
Combine “Feine Ziege” goat’s milk cheese spread, butter, flour, salt, and, using a hand blender or food processor, mix to a smooth dough.
Shape dough into a ball and wrap in cling film. Place in the refrigerator to chill for at least 2 hours or longer if possible. You can even leave it overnight.
Remove cheese bites from the oil marinade and leave to drip dry (tip: you can catch the oil and use it for salads or frying). If necessary, also pat dry with a piece of kitchen roll.
Cut each of the round slices of boiled ham into 7 triangles.
When the dough is thoroughly chilled, cut in half and knead. It is best to immediately return the other half to the refrigerator until needed.
Now, using a rolling pin, roll out the portion of dough on a floury work surface until it is approx. 26 cm in diameter. As you do so, occasionally turn the dough to ensure that both sides pick up enough flour and the dough does not stick to the rolling pin.
Then cut the dough circle into 14 equal slices (you can also use a cake divider).
Use a knife to make sure that each piece is cut properly so that every single triangle can be used.
Place the ham on each triangle of dough and then spread a little cheese on top. Roll up each triangle into a crescent shape with the point tucked under. Place crescents one after the other on a baking sheet lined with parchment paper.
Brush with beaten egg yolk to produce a nice colour.
Bake in the oven on the middle shelf at 160°C (fan) for approx. 15 minutes until they are golden yellow. Once they are done, remove from the baking sheet and place on a wire rack to cool. If you don’t want to wait that long, they also taste delicious when still warm ;-)
Our tip:
The mini cream cheese crescents with cheese and ham are also great for preparing in advance and can be stored, for example, in a biscuit tin for later.
