Machos - Nachos with Chili con Carne

Ingredients for 4 portions

1 pack of nachos

250 g of mince

120 g of Waldviertler Selchkäse (grated)

1 sheep’s milk cheese

1 bowl of grilled peppers

1 tin of sweetcorn (drained)

2 cloves of garlic

1 chilli shoot (pitted)

Olive oil

Salt

Pepper

Thyme

Cumin

 

 

Preparation

For the “Machos”, first peel the garlic and chop finely with the chilli shoot. Wash the peppers, halve and pit these, and cut into small cubes.

Heat up the frying pan, sauté the meat without fat until the liquid has evaporated, then add the oil, garlic and grilled peppers and roast until golden-brown. Stir in the chilli, herbs and grated cheese. Remove from the stove, and mix in a splash of water if necessary. Separate the sheep’s milk cheese from the brine and stir. Finally, add the sweetcorn and serve as a dip with chilli and the nachos.

 

Preparation time:  15-30 min.
Level of difficulty: easy
