Goat´s milk cheese skewers with melons and basil vinaigrette

Ingredients for 10 skewers

½ cantaloupe
½ watermelon
20 goat’s milk cheese balls
10 slices prosciutto
½ bunch of basil
Salt
Pepper

 

For the vinaigrette:
1 shallot
1 bunch of basil
1 garlic clove
½ tsp chili flakes
70 ml of olive oil
2 tbsp red wine vinegar
1 tsp salt

10 wooden skewers
 

 

 

Preparation

For the vinaigrette, peel shallot and garlic and cut into large pieces. Pinch basil leaves from stems, combine with garlic and shallot pieces and purée with a blender until smooth. Set aside.


For the skewers, pinch basil leaves from stems. Halve watermelon and cantaloupe, discard seeds and scoop out balls using a fruit baller.


Thread an assortment of the ingredients on each skewer – melon ball, basil leaf, cheese ball, ruffled prosciutto, etc. Season with salt and pepper and drizzle with basil vinaigrette.
 

 

Preparation time: approx. 30 min.
