Ingredients for 4 persons
1 tbsp balsamic vinegar
½ lollo rosso
1 small radicchio
1 cup (180g) goat´s milk cheese balls
Black pepper, freshly ground
For the dressing:
120 ml cider vinegar
100 ml safflower oil
50 ml walnut oil
1 pinch of salt
4 tsp peppercorns
Halve or (if necessary) quarter the strawberries.
Cook 4-5 strawberries and sugar in 200 ml of water until the liquid has reduced by half and turned a nice pinky-red colour.
Pour the boiling hot syrup through a sieve. Leave to infuse until the syrup has cooled. Mix the rest of the strawberries and balsamic vinegar and leave to marinate for a further 15 minutes.
Place all the ingredients for the dressing and the strawberry syrup in a screw-top jar.
Wash salads, spin dry and pull apart a little. Cut radishes into thin slices. Place salad and radishes on a plate.
Arrange goat´s milk cheese balls on top of salad medley. Season well with pepper, arrange the marinated strawberries and drizzle with the well-shaken dressing just before serving.
