Pumpkin dumplings in sage butter and Waldviertler smoked cheese

Ingredients for 4 persons

1kg pumpkin (preferably muscat pumpkin)
120g Waldviertler smoked cheese
Flour (as needed)
2 eggs
Salt
Pepper
120g butter
1 tbsp. sage (freshly chopped)

 

 

Preparation

For the pumpkin, dumplings peel the pumpkin, remove the core and cut into thin slices. Place the slices on a baking tray and put it into the preheated oven (180°C, 10-15 minutes).

 

Strain away the liquid from the pumpkin, mix the pumpkin slices in a blender and allow to cool. Stir in the eggs, season with salt and pepper and add flour as needed for a medium-soft dumpling dough. 

Bring salted water to the boil. Now put the dough on a wet and oiled tray and scrape with a knife little dumplings into the hot water. Let it boil up and strain the dumplings. 

 

Melt the butter in a large pan, put in the freshly chopped sage and the drained dumplings. Sauté, put it on the plates, sprinkle it with grated Waldviertler smoked cheese and serve.
