Vegetable salad with Waldviertler goat´s milk cheese and walnuts
Ingredients for 4 persons
approx. 200 g rocket salad
1 red onion
2 tbsp walnut oil
3 tbsp olive oil
4 tbsp freshly squeezed lemon juice
4 tbsp freshly squeezed orange juice
1 ½ tbsp honey
150 g Waldviertler goat’s milk cheese
4 tbsp coarsely chopped walnuts
4 tbsp dried cranberries
Peel the kohlrabi and celery, peel the apples, halve, and remove the base of the stalk and cores. Roughly grate the vegetables and apples on a vegetable grater (or make into ribbons with a spiral cutter). Wash the rocket salad and spin dry. Peel the onions and cut crossways into thin rings.
Mix the walnut oil, olive oil, lemon juice, orange juice and honey together, and season with salt and pepper. Mix the vegetable and apple ribbons, rocket and onion rings with the dressing, and arrange in a bowl.
Chop the Waldviertler goat’s milk cheese into small cubes and sprinkle the salad with the cheese cubes, walnuts and cranberries before serving.

As an alternative to the vegetable grater you can also cut the vegetables into nice ribbons with a spiral cutter.
