The Giant Goat

Ingredients for 4 persons

4 brioche burger buns
1 jar of peppersweet chutney (available at the Käsemacherwelt shop in Heidenreichstein)
1 cup (120g) Bacon-wrapped goat’s milk cheese tartlets
Rocket leaves
Mustard


For the beef patties:
700 g minced beef
2 shallots
1 egg
2 tbsp breadcrumbs
3 cloves of garlic
1–2 tbsp Worcestershire sauce
Parsley
Butter
Salt and pepper

 

 

Preparation

For the beef patties, finely chop the shallots, garlic, and parsley. Braise the shallots and garlic in some butter until translucent. Mix together the shallots and garlic, parsley, egg, breadcrumbs, Worcester sauce and minced beef. Season to taste with salt and pepper and mix well, then shape into four patties of equal size with a burger press or just using your hands. 

 

Set the grill or frying pan to 180°C on direct heat. Cook the patties for approx. 4 minutes on each side. After turning the patties, cut open the brioche burger buns and briefly grill on the cut surfaces. Then quickly brown the bacon-wrapped goat’s milk cheese tartlets on both sides on a high heat until the bacon is crisp.

 

Spread some mustard on the brioche burger buns and scatter with some rocket leaves. Place 1 round of goat’s cheese on each patty and top with 1–2 spoons of peppersweet chutney. Cover with the top of the bun and serve. 

 

Preparation time: approx. 45 minutes
