Ingredients for 4 servings
500 g minced meat (equal parts pork and beef)
1 large leek
4 or 5 potatoes
1 l vegetable stock
120 g Waldviertler smoked cheese
A little oil for browning the meat
Salt, pepper, garlic, parsley
Heat a little oil in a large saucepan. When the oil is hot, add the minced meat and sauté until all of the liquid has evaporated and the meat is crispy and browned. In the meantime, peel and dice the onions and add to the minced meat to cook through.
Clean leek, slice in half lengthwise and cut into thin rings. Add to the meat and sauté. Season with salt, pepper and garlic and pour in 1 l of vegetable stock. Peel potatoes, cut into bite-sized cubes and add to the soup. Simmer until potatoes are firm to the bite. Season to taste and stir in some finely chopped parsley, if desired.
To serve, spoon a few ladles into a soup bowl and garnish with parsley and grated Waldviertler smoked cheese.
