Soup from smoked cheese with black bread croutons
Ingredients for 4 persons

600 ml vegetable soup
1 medium onion
250 ml double cream
60 g Waldviertel sheep’s milk smoked cheese
1 tbsp flour
Butter
White wine
Salt
Pepper
Black bread croutons
50g black bread

Preparation
Peel the onion, cut into small pieces and “sweat” with a little butter in a pan without allowing it to take colour. Add a little white wine, pour over the vegetable soup, then allow to simmer for about 10 minutes. Grate the cheese and stir about 50 g into the simmering soup. Mix the flour with the double cream, whisk and gradually stir into the soup to thicken. Allow the soup to come to the boil and continue to simmer until all the cheese has melted. Season to taste with salt and pepper.
For the black bread croutons, cut the black bread into approx. 0.5 cm cubes and fry in butter.
Pour the smoked cheese soup into bowls and scatter the black bread croutons and the remainder of the cheese (10 g) on top.
Tip: Make this soup even tastier by frying some little cubes of ham with the croutons.
