Ingredients for 4 people
500 g flour
200 ml sheep’s milk (from Die Käsemacher)
A pinch of salt
1 large onion
1 medium-sized onion
250 ml double cream
120 g Waldviertel sheep’s milk smoked cheese
For the noodle dough, mix the eggs, milk, and salt with a wooden spoon and gradually work in the flour. Using the wooden spoon, beat by hand until the dough is smooth and forms bubbles. Using a Spätzle Hobel [noodle maker], gradually push the dough into boiling water. Allow the noodles to float to the surface, drain, rinse with cold water and set aside.
Grate the Waldviertel sheep’s milk smoked cheese. Melt 1 medium-sized onion in a little butter, add the noodles, pour double cream over, mix in the grated smoked cheese and stir until the cheese has melted.
In the meantime, for the fried onion, slice the onion into rings and fry quickly in butter until the onion is golden brown.
Season the noodles to taste with salt, pepper, and nutmeg and garnish with fried onions.
tip: A little finely chopped parsley gives a fresh look to your cheese noodles.
