Tarte flambée with goat´s milk cheese

Ingredients
200g flour
2 tbsp oil
125 ml water
1 tsp salt
150g crème fraîche
200g red onions
150g Waldviertler goat´s milk cheese
3 tbsp fresh rosemary, finely chopped
3 tbsp honey
Preparation
Mix flour, oil, water and salt to a dough until no longer sticky, adding a little more flour if necessary.
Roll the pastry out thinly on a greased baking tin. Lightly salt the crème fraîche and spread on the pastry. Halve the onions lengthwise, slice thinly and spread over the pastry.
Cut the goat’s cheese into small pieces and scatter over the pastry.
Scatter the chopped rosemary leaves over.
Bake the tarte flambée at 250°C for 15 to 20 minutes until the edge is nicely browned and the cheese has melted.
After taking the tarte flambée out of the oven, drizzle the honey over the cheese with a spoon.
Serve immediately while still hot.
